For years, you have been eating the school’s food, not knowing how it’s made. From the pizza to the spaghetti, to even the turkey, we have all wondered, “What really goes on behind the counter?”
When asked how it was made, students had no idea how to respond. “I have not a clue how the food is made,” Junior Waylon Moppin says. “I would guess that it is frozen and just heated up when it’s ready to be served.” This consensus was shared among students.
Believe it or not, the food is made a lot differently than you might think. The food is prepared by many chefs and cooks here at the school. Another thing that might surprise you – these people are not hired by the school. They are hired by an independent company, SFE, that also provides them with the food to prepare.
Tabitha Makey talks about the secrets that go on behind the scenes, “We have a food service we order certain foods from.” Makay said, “ A lot of stuff comes in frozen, pre-made, and then there are certain items, say, about half the items we make from scratch, like out of cans, or we have the meats.”
SFE, also known as Southwest Foodservice Excellence, is a premier, culinary-driven management company exclusively dedicated to K-12 school nutrition, operating in over 150 districts across 30 states. (Via sfellc.com)
